Mangalore Buns

Buns is a popular deep fried snack and breakfast dish in Udupi-Mangalore region. They are nothing but fermented banana puris. Most of the restaurants in Mangalore and Udupi region serve this for breakfast or even snack. It is made with refined flour (Maida) and served with spicy coconut chutney and sambar. Or just dunk it in hot filter coffee and have it. It tastes heaven.  You can even have it as is without any accompaniment.

This is the perfect buns recipe. Please follow each step to get that soft and super fluffy buns.

Note : If you are planning to prepare buns for breakfast, then prepare the dough the previous night and let it rest overnight. If you want to prepare it for evening snack, then prepare the dough in the morning. Dough needs at least 8hrs of resting time.

Mangalore Buns/ Banana Puris

a popular deep fried snack and breakfast dish in South Karnataka, made using maida, bananas and curd.

Ingredients:

  • Maida - 2½ cup
  • Banana, medium sized (ripe) - 1
  • Besan - 1 Tbsp
  • Curd - ½ cup + ½ cup water
  • Sugar - 1 Tbsp
  • Jeera - 1 tsp
  • Baking soda - ½ tsp
  • Salt - 1 tsp
  • Ghee - 1 tbsp + 1 tbsp
  • Oil for deep frying

Instructions:

  1. In a bowl, mash the bananas completely using a fork or masher. Add the rest of the ingredients, except oil, and knead it well.to make a dough. The dough should be of the soft and bit sticky to the hands .
  2. Spread little ghee. Cover with a cling wrap or damp cloth and set aside for 5-6 hours or overnight.
  3. Heat oil in a frying pan on medium heat.
  4. Pull out a lemon sized ball of dough and use rolling pin to make the puris. While rolling use bit of flour. The puris should be thick.
  5. Drop the puris in oil and deep fry on both sides until they turn brown.
  6. Remove from oil and drain on paper towel.
  7. Serve hot with coconut chutney and Sambhar or as it is.

Notes:

2. Amount of sugar can be increased or decreased as per your palate.

3. Use over-ripe bananas for best results.
