Suran 65 ¦ Elephant Yam 65

Suran 65 or Elephant Yam or Suvarna gedde 65 is an appetizer or evening snack. Suran is marinated with curd and masalas and fried. Then these fried Suran is seasoned with garlic, curry leaves and curd mixture. This is a very flavorful and spicy dish.

Normally, Suran, being a healthy vegetable, is rejected due to its property of causing itchiness in throat.  But here I have prepared a recipe which is itch free and suran haters will start loving it. Just follow my recipe properly.

Suran 65 | Elephant Yam 65

Elephant yam or suran marinated and deep fried and then seasoned with curd masala and spices

Ingredients

  • Elephant Yam / Suran - 200 gms
  • Ginger-garlic paste - 1 tsp
  • Curd/ yogurt - 2 tbsp + 2 tbsp
  • Red chilli powder - 1 tsp + 1 tsp
  • Pepper powder - tsp
  • Turmeric powder - tsp
  • Cornflour - 1 tbsp
  • Maida - 1 tbsp
  • Cumin seeds - 1 tsp
  • Garlic (chopped) - 5 cloves
  • Curry leaves - 2 sprig
  • Green Chillies (slit) - 2
  • Oil for frying

Instructions

  1. Peel and wash the suran properly. Then cut into bite size cubes.
  2. Boil water and add little salt. Add the cubed suran pieces and parboil for 5 minutes. Once done switch off the flame and immediately drain off the water and run cold water to stop the cooking process. Drain the water completely.
  3. Now in a large bowl, add the parboiled suran pieces. Add ginger-garlic paste, curd, salt, red chilli powder, pepper powder, turmeric powder, cornflour and maida. Mix well so that all the pieces are well coated. Sprinkle some water and mix well. Add chopped curry leaves and mix once. Cover and let it marinate for 15-30 minutes.
  4. Heat oil in a pan. Once hot, drop the marinated suran pieces and fry until golden brown and crisp from outside. (flame should me medium). Stir in between for evenly frying.
  5. Once done, remove on a plate lined with tissue paper to drain off excess oil.
  6. In the same pan, add 1 tbsp of oil. ( you can take the fried oil itself)
  7. Add cumin seeds, garlic, green chillies and curry leaves. fry for a minute, Switch off the flame.
  8. Now add curd and mix well. Switch on the flame. 
  9. Add red chilli powder and mix until the masala is dry. 
  10. Add the fried suran pieces and mix well with the masala.
  11. Add a pinch of salt and sugar and mix well.
  12. Switch off the flame and serve.
  13. Consume it when warm.

Notes:

Make sure you fry the yam properly on medium flame. It remains raw inside then your throat will start to itch.
