Dudhi Sannana ¦ Sweet Idli

Dudhi Sannan ¦ Sweet idli or Godd idli as we GSBs call it. This idli is a popular breakfast of GSB community. This is very simple and very easy to make. Especially kids will love it. It is very healthy as well. Tastes good with homemade butter.

This is my personal favorite. But like to eat as evening snack. My granny used to make this whenever I visited her. So thought of sharing my granny's recipe to all of you.

This is the perfect recipe. Please don't miss out any steps or else your idli will be hard and wont taste good.

Dudhi Sannan | Sweet Idli

A traditional GSB breakfast recipe made with rice, poha and coconut sweetened with jaggery.

Ingredients:

  • Dosa Rice - 1 cup
  • Poha (flattened rice) - 1 cup
  • Buttermilk - 1 cup
  • Jaggery - 1¼ cup approx
  • Fresh coconut (grated) - ½
  • Green Cardamom - 4
  • Cashewnuts - 2 tbsp
  • Raisins - 2 tbsp
  • Salt - a pinch
  • Ghee for greasing

Instructions:

  1. In a blender jar, take poha, coconut and buttermilk. Grind to a coarse paste.
  2. Now add Jaggery and grind for a minute. Then add cardamom and grind to a smooth paste. Transfer to a large bowl.
  3. Wash the dosa rice very well. Grind until coarse adding ½ cup water. It should me like fine rawa or fine sooji consistency.
  4. Now add this in poha batter and mix well until well combined. The consistency should be like normal idli batter.
  5. Add pinch of salt, cashewnuts and raisins. Mix well. Cover and let it rest for atleast 4-5 hrs or overnight.
  6. Next day, give it a quick stir. The batter will be thickened after resting it. Add water (½ cup) to get the required consistency (normal idli batter consistency)
  7. Heat the steamer adding water. Meanwhile, grease the idli moulds with ghee and add the batter. Make sure you leave some space because idli will rise.
  8. Place the moulds in the steamer and steam for 15-20 minutes.
  9. After 20 minutes, open the lid and then switch off the flame.
  10. Leave it open for 2 mins. Check by inserting the skewer or toothpick if the idlis are done or not. Then transfer the moulds  to a large plate or on counter top and allow it to cool for 5 mins.
  11. Then gently demould using a butter knife or a spoon. Or you can press slighlty from the top to leaven the sides and then pat. the idlis will come out clean from the mould. (Refer the video)
  12. Soft, spongy sweet idlis are ready. Serve warm with homemade butter or ghee.
