Vegetable Pulao

Pulao is a comfort food, which is healthy and also quick to make. The rice and veggies are cooked together with whole spices. This dish is made with basic ingredients which you have in your pantry. I cook Pulao almost every week. But recipes will be different every time. This recipe is one of my variation which is very easy and no grinding included. Can be given to kids too since it's not spicy.




Vegetable Pulao

A quick recipe and One-pot meal where rice and veggies are cooked with whole spices in ghee

Ingredients:

  • Basmati rice - 2 cups
  • Vegetables - 2 cups (I used carrots, green peas, potato and beans)
  • Onions (thinly sliced) - 2 large
  • Cashewnuts - 2 tbsp 
  • Ginger-garlic paste - 1 tbsp 
  • Mint leaves - handful
  • Milk - 1 cup
  • Water - 2 cups
  • Pulao masala or garam masala - 1 tbsp
  • Pepper powder - 1 tbsp
  • Ghee - 5 tbsp
  • Salt to taste
Whole spices :
  • Bay leaves - 2
  • Cinnamon - 1" stick
  • Green cardamom - 2
  • Cloves - 2 to 3
  • Black peppercorns - 6 to 8
  • Javitri (mace) - 2 strands
  • Saunf - 1 tsp

Instructions:

  1. Wash once and soak Basmati rice for 30 minutes.
  2. In a cooker, add Ghee and let it heat. 
  3. Now add all the whole spices and fry until you get a pleasant aroma. 
  4. Add cashewnuts and fry till golden brown. 
  5. Add onions and sauté until translucent. 
  6. Add ginger-garlic paste and sauté until the raw smell goes off. 
  7. Now add mint leaves and mix well. 
  8. Add in the veggies and mix gently. 
  9. Add pulao masala or garam masala and mix. 
  10. Now add the soaked rice draining off all the water. Mix gently without breaking the grains. 
  11. Add 1 cup milk and 2 cups of water. Add salt and pepper powder mix gently. 
  12. Now close the lid of the cooker and allow it to cook till one whistle. 
  13. After one whistle, switch off the flame and let the pressure settle down by itself. 
  14. Once done, carefully open the lid and gently fluff up the rice with a spoon or fork. 
  15. Garnish with croutons and serve hot with raita of your choice. 

Notes:

Here, Main thing is rice to water ratio. If you are using Basmati rice then for 1 cup of rice, use 1½ cups of water.(cook for 1 whistle) For any other rice, use 2 cups of water for 1 cup of rice. (cook for 2 whistle) I used milk in this recipe. So for 2 cups of rice, I used 2 cups of water and 1 cup milk. You can use coconut milk instead of normal milk. Use any vegetables of your choice.
