Karkal cake ¦ Whole Wheat flour halwa ¦ Atte ka halwa
Well, don't go by the name. 😁 Name of the dish is karkal cake, but the texture is like halwa or pudding. I don't have any idea why it's called so,but taste-wise it's yum.
North Indians call this Atte ka Halwa, Kada Prashad because the process and the ingredients used here are similar.
I don't remember when I relished it first. But after that it is my favorite sweet dish. So during all my family functions, sweet dish for breakfast or evening snacks was Karkal cake. 😊 You will find this sweet dish in Mangalore and Udupi region of Karnataka. Also, if you attend any GSB community weddings, Brahmopadesham, chaulopanayanam, house-warming, baby shower etc.. etc.. Whatever function it is, you will definitely find this sweet served with other savoury items.
Now it's Shravan month going on, where all married ladies perform tulasi pooja and worship the Sun every Friday and Sunday for a month. We call it "Chudi Pooja" in Konkani. (you can find more details here)
So while performing this Pooja, we also offer naivedyam or naivedya. One of these days, I prepare Karkal cake as offering. 😊
Let's go to the recipe.
Karkal cake ¦ Whole Wheat flour halwa
Yield: 4 - 5

An aromatic and tasty sweet prepared by slow roasting whole wheat flour in ghee
Ingredients:
- Whole wheat flour - 1 cup
- Ghee - 1 cup
- Sugar - 1 cup
- Roasted Cashewnuts - 1 tbsp
- Cardamom powder - ¼ tsp
- Water - 2 cups
Instructions:
- Boil 2 cups of water and keep it ready.
- In a heavy-bottom kadai, add Ghee and allow it to heat.
- Now add wheat flour and fry on low flame until you get a nutty aroma. The color changes to brown. (This step takes almost 10-12 minutes)
- Once done, add boiling water little at a time very carefully and stir continuously to avoid lumps. (Be very careful here. Or else you'll burn your hand)
- When all the water is absorbed by the wheat flour, add sugar and continue to stir until sugar melts.
- The ghee oozes out completely, that's when the Karkal cake is done. It will be deep brown in color. (this step takes 15-20 mins)
- Switch off the flame. Add cardamom powder and roasted nuts.
- Serve hot or allow it to cool at room temperature.
Notes:
The whole process should be done on low flame.
Use cast iron Kadai for authentic taste.
Be patient in roasting the wheat flour. The taste and color of the cake depends on how you roasted the flour.
You can reduce the amount of Ghee. Use ½-¾ cup.
