Foxtail millet (Navane) and Broken Oats Vegetable Pulav

Millets are great for health conscious people. It should be a part of daily diet.  Here I have used Foxtail Millet also known as Navane in Kannada and Kangni/Kakum in Hindi.

Foxtail millet is rich in dietary fibre, protein, healthy micros (vitamin and minerals) and low in fat. Studies show that people who consume foxtail millet in their diet have a lower probability of suffering from diabetes.

Here I have made it more healthier adding lots of vegetables.

Ingredients:

  • Foxtail millet (Navane) – 1 cup
  • Broken Oats (I used KOSH) – ½ cup
  • Mix vegetables chopped (green peas, cauliflower, carrots) – 1 cup
  • Tomato (roughly chopped) – 1
  • Garlic - 1 small pod
  • Ginger – 1 inch
  • Coriander leaves – ½ cup
  • Mint leaves – ¼ cup
  • Cinnamon – 1 inch
  • Cloves – 2 or 3
  • Peppercorns – 6 to 7
  • Bay leaf – 1
  • Cardamom – 2
  • Pulav masala (I used MTR) – 1 Tbsp
  • Turmeric powder – a pinch
  • Red chili powder – ½ tsp
  • Ghee – 2 tbsp
  • Salt to taste

Instructions:

  1. Wash the millet and soak in 2 ½ cups of fresh water for about 30 minutes.
  2. Dry roast broken oats until you get a pleasant aroma. Keep it aside.
  3. Grind tomato, ginger, garlic, coriander leaves and mint leaves to smooth paste.
  4. Heat ghee in a cooker. Add the whole spices and sauté till you get the aroma.
  5. Then add the ground paste and fry till the moisture and until the raw smell goes away.
  6. Add spice powders. Mix well. Now add the vegetables and sauté for a minute.
  7. Add the soaked millet with water, broken oats, salt and 1 cup water, close the lid and cook up to 2 whistles.
  8. Wait until the pressure goes off.
  9. Serve it hot with fresh curds or raita.
