Mixed Vegetable Saagu
Saagu is a side dish served with poori and set dosa in many South-Indian hotels. It is a very flavourful dish with roasted spices,coconut and lots of vegetables. This recipe is prepared with traditional, typical and authentic style.

A restaurant style typical, traditional and authentic recipe made with mixed vegetables in roasted spices and coconut masala which is served with puris and set dosas
Ingredients:
- Mixed Vegetables (Carrot, Potato, Beans, Green Peas, Cauliflower diced – 2 cups
- Tender Cashewnuts - a handful
- Onion (chopped) – 1
- Mustard seeds – ½ tsp
- Curry leaves – 1 sprig
- Oil/Ghee – 1 tbsp
- Salt to taste
To grind :
- Cinnamon stick – 1”
- Cloves – 4
- Marathi Moggu – 1
- Fresh Coconut (grated) – ½ cup
- Poppy seeds (roasted) – 1 tbsp
- Roasted chana dal – 1 tbsp
- Green chillies (slit) – 5 (You can add more if u want more spicy)
- Coriander leaves (roughly chopped) – a handful
- Lemon juice – 1 tbsp
- Oil – 1 tsp
Instructions:
- Boil the diced veggies and tender cashewnuts and keep aside.
- Heat a tsp of oil in a pan and add green chillies and fry them. Add cinnamon, marathi moggu and cloves to it and fry for a while until you get a pleasant aroma.
- Grind the fried ingredients with grated fresh coconut, roasted khus khus, roasted chana dal, coriander leaves and make it into a smooth puree.
- In a kadai, heat oil. Add mustard seeds and allow it to splutter. Add curry leaves and chopped onions. Fry onions until translucent. Now add boiled vegetables and fry for some time.
- Add the ground masala and fry until the oil oozes out from the mixture. Now add salt and water (approx. 1 cup) and bring it to boil.
- Once done switch off the flame and add lemon juice. Give it a quick stir.
- Serve hot with Poori, chapathi or Set dosa.
