Ragi Idlis/ Finger Millet Idlis

Ragi is a whole grain that is gluten-free and a staple in South India. It is rich in fiber that helps with weight loss and diabetes. It's packed with calcium, good carbs, amino acids and Vitamin D. Including it in your daily diet is really very healthy and nutritious. 

Here is my version of soft and fluffy ragi idlis with tomato onion chutney

Ragi Idlis/ Finger millet idlis

Yield: makes 20 idlis

a healthy, soft and fluffy idlis made using ragi, urad dal and rice rava

Ingredients:

  • Whole Ragi – 1 cup
  • Idli Rava – 1 cup
  • Urad dal – ½ cup
  • Salt to taste
  • Coconut Oil (for greasing idli plates)

Instructions:

  1. Take urad dal and ragi separately in a mixing bowl and rinse with water twice or thrice and then soak it in water.
  2. Then grind urad dal first. When its done ¾ th, add ragi and grind to smooth paste. Once done, transfer it to a vessel.
  3. In another bowl, wash idli rava. Squeeze out excess water and mix to the urad- ragi mixture. Add salt. Mix well and allow it to ferment overnight.
  4. Next day morning, mix the batter well. Check for d batter consistency (Should be like normal idli batter). Check for salt as well.
  5. Now heat a idli steamer. Grease idli moulds with oil and pour batter into it. Steam them for 15-20 mins.
  6. Switch off the steamer n take off d idli moulds. Allow it to cool for few mins n then demould them.
  7. Serve with tomato onion chutney. (It tastes yum)
