Cornmeal Upma/ Maize Rava Upma



Cornmeal provides a rich source of dietary fiber, iron and phosphorus. It is made by grinding dried corn into a coarse powder. Its gluten free.

Here is a healthy breakfast recipe I prepared using cornmeal.. :)




Ingredients :

Cornmeal/Maize rava - 1 cup
Onion (sliced) - 1
Tomato - 1
Green chilly (slit)- 2
Fenugreek leaves (washed n chopped) - ½ cup
Boiled vegetables - (I used carrot, green peas n french beans)
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Urad dal - 1 tsp
Curry leaves -1 sprig
Garam masala powder - ½ tsp
Water - 2 cups
Coriander leaves for garnish
Salt to taste
Oil - 1 Tbsp

Method :

Dry roast cornmeal and keep aside to cool.

Heat oil in a kadai. Temper mustard seeds, cumin seeds, urad dal and curry leaves. Allow it to splatter.

Add sliced onions and fry till translucent. Now add green chillies and fenugreek leaves and sauté for a minute.

Now add tomatoes and fry until it’s mushy. Add boiled vegetables and fry for 2-3 minutes.

Add salt and garam masala powder and sauté. Now add water and bring it to boil. Add roasted cornmeal and mix well. Cook until the water gets absorbed.

Switch off the flame. Garnish with coriander leaves and serve hot. :) :)
