Easy Egg masala
Easy Egg masala.. As the name suggests, this is a quick and easy side dish for egg lovers which goes well with phulkas and rotis. The main taste of the gravy comes from Onions. Onions should be fried until golden brown. Also adding besan gives a thick gravy.
This is my own recipe. And its too yummy as well.

A yummy side dish prepared with eggs in onion and besan gravy
Ingredients:
- Boiled eggs - 6
- Onions - 3 large sliced
- Tomatoes - 3 large chopped
- Green Chilli (slit) - 1
- Besan - 2 Tbsp
- Saunf - 1 tsp
- Milk - ½ cup
- Turmeric powder - ½ tsp
- Red Chilli powder - 2 tsp
- Coriander powder - 1 tsp
- Garam masala powder - 1 tsp
- Coriander leaves - 2 tbsp chopped
- Oil - 3 tbsp
- Sugar - 1 tsp
- Salt to taste
Instructions:
- Make X slits on each boiled egg and keep it aside.
- In a bowl, make paste of spice powders and salt with little water.
- Heat oil in a pan, add Saunf and allow to splutter.
- Add onions and fry onions till brown. Remove 1 tbsp of fried onions for garnishing.
- Now add Besan and fry till it is completely fried.
- Add the spice paste and fry for a minute.
- Now add tomatoes, mix well and cover and cook till soft. Once done add water, salt to taste, mix well. Cover and boil. (Consistency of the gravy should be thick. So add water as required.)
- Add Sugar and slit green chilli. Give it a stir.
- Add milk and stir continuosly.
- To this gravy add the slit eggs. Gently coat the eggs with the gravy. Cover simmer for 5 - 7 minutes.
- Garnish with Coriander leaves n fried onions. Switch off the flame.
- Serve hot with phulkas.. :)
