Creamy Pumpkin Soup

Pumpkin is very healthy vegetable. You can roast it , sprinkle little salt and pepper and relish it. 

I love pumpkin in any form. This is a treat for soup lovers and Pumpkin lovers. I had seen this recipe on Fox life.. I have added my own twist in this 😊 Its delicious and healthy too.. 😃


Creamy Pumpkin Soup

A creamy and healthy soup prepared using pumpkin

Ingredients:

  • Pumpkin cubes - 3 cup
  • Milk - ¼ cup
  • Pumpkin stock - 1 cup
  • Garlic cloves (peeled n crushed) - 2
  • Cinnamon - 1 inch
  • White pepper powder - ¼ tsp or as per taste
  • Salt to taste
  • Parsley - to garnish

Instructions:

  1. In a cooker, add pumpkin, garlic, cinnamon, add 2 cups of water, salt and mix well. Cover with a lid and cook. (1 whistle is enough)
  2. Remove from the flame and keep aside to cool.
  3. Once cooled, remove cinnamon from it and strain. Keep the stock separately. Blend the cooked pumpkin in a mixer till smooth.
  4. Transfer the mixture into a deep non-stick pan, add the milk, stock and pepper powder. Mix well. Check for salt and add if necessary. (Consistency must be thick)
  5. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  6. Serve in a bowl and garnish with parsley. Enjoy the soup.. :)

Notes:

U can add dried herbs as well.. :) Add vegetable stock to make it more healthy..
