Creamy Pumpkin Soup
Pumpkin is very healthy vegetable. You can roast it , sprinkle little salt and pepper and relish it.
I love pumpkin in any form. This is a treat for soup lovers and Pumpkin lovers. I had seen this recipe on Fox life.. I have added my own twist in this 😊 Its delicious and healthy too.. 😃
Creamy Pumpkin Soup

A creamy and healthy soup prepared using pumpkin
Ingredients:
- Pumpkin cubes - 3 cup
- Milk - ¼ cup
- Pumpkin stock - 1 cup
- Garlic cloves (peeled n crushed) - 2
- Cinnamon - 1 inch
- White pepper powder - ¼ tsp or as per taste
- Salt to taste
- Parsley - to garnish
Instructions:
- In a cooker, add pumpkin, garlic, cinnamon, add 2 cups of water, salt and mix well. Cover with a lid and cook. (1 whistle is enough)
- Remove from the flame and keep aside to cool.
- Once cooled, remove cinnamon from it and strain. Keep the stock separately. Blend the cooked pumpkin in a mixer till smooth.
- Transfer the mixture into a deep non-stick pan, add the milk, stock and pepper powder. Mix well. Check for salt and add if necessary. (Consistency must be thick)
- Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve in a bowl and garnish with parsley. Enjoy the soup.. :)
Notes:
U can add dried herbs as well.. :)
Add vegetable stock to make it more healthy..
